Pedro Ximenez is a grape from Spain typically associated with Sherry production.If you ever get the chance to try the Black Sherries as they call them give them a go. The are lovely. Very similar in style to a Rutherglen Muscat.
But, in this instance, we have made Pedro into a dry white wine. It’s a really interesting little beastie. The palate is full and generous and has an oily character. It rolls around in your mouth. The nose is reminiscent of a Semillon.
A friend of mine is growing it out in Moree and getting great results.
Try it with things like sushi and sashimi.
