I really like Prosciutto. Its light, it’s fresh and it’s fun.
Sadly though, there aren’t any Prosciutto vineyards around here. So, when we decided we wanted to make this style the question was how? After looking around the Hunter we found a nice little Chenin Blanc vineyard. Chenin Blanc is used in the Loire Valley to make sparkling wines so there is a good precedent for making this style from Chenin.
This style is all about freshness, so we make it in a few weeks. It’s light, lemony and has a granny smith apple character. It has a similar level of carbonation to a champagne style.
Drink it in its youth with friends.
