2018 Trevor McTin Pig Shiraz
Trevor is one of our main Hunter growers so we thought it’d be nice to tip the hat in his direction and name a wine after him. The Hunter Valley became internationally famous on the back of its Shiraz wines, the best of which have a lovely earthy savouriness and a depth of complexity.
They are only light to medium bodied wines, but seem to have a hang time in the bottle which can lead to them enjoying quite extraordinary aging timeframes.
2018 in the Hunter was a warm dry vintage which had a cool finish. This cool finish avoided the issue of shrivel which can plague Shiraz in warmer climates and allowed the Shiraz to achieve full ripeness.
The berries were crushed and de-stemmed into two and a half ton red fermenters where they were held chilled for 5 days, then warmed and hand plunged round the clock for several more days.
Fermentation was finished in larger format French oak where the wine was matured for a year prior to bottling. The resulting wine is supple and approachable. A great example of the style.
This wine will drink well over the next decade. After that its just a case of opening one every few years and monitoring its progress over time.
