back when i was chefing i remember looking at the dessert menus of our restaurants and i realised that most of the desserts had chocolate in them or coffee or red fruits such as cherry, plum and raspberry.
the wine lists has on them dessert wines such as botrytis semillon or botrytis riesling.
white dessert wines have the wrong flavours to go with a black forest cake or a chocolate brownie or tiramisu.
so, i realised that in order to go with chocolate desserts we needed to be making red dessert wines.
so, i started making red dessert wines.
the flavours of the wines marry up perfectly with your favourite chocolate dessert.
