pedro ximenez is a grape from spain typically associated with sherry production. if you ever get the chance to try the black sherries as they call them give them a go. they are lovely. very similar in style to a rutherglen muscat.
but, in this instance, we have made pedro into a dry white wine. it’s a really interesting little beastie. the palate is full and generous and has an oily character. it rolls around in your mouth. the nose is reminiscent of a semillon.
a friend of mine is growing it out in moree and getting great results.
try it with things like sushi and sashimi.
