this wine is starting to get a bit off a buzz around it. the base grape is called saperavi, which is indigenous to georgia.
in georgian, the word means something like “paint” or “dye”. seperavi is from a family of grapes called teinture, which is when a grape has tinted flesh. it’s not common to encounter this. the other teinture grape we make into wine here at piggs is chambourcin which we put in the pigs blood.
anyhow, with a name like paint you can imagine what it looks like in the glass.
seperavi is not for the faint hearted. it’s in the wine for heroes category. we blended a bit of lagrein into it to take some of the sting out of it and that did calm it down.
this is a robust, bold red best suited to cold nights and slow cooked meats.
