this is yet another wine from our good friends will and xanthe at hudson vineyards in young. young is a cold place and as a result the riesling ripens with a strong line of acidity. wines like this tend towards being thin and tart, but if you leave a small amount of sugar in the wine it can balance the acidity and create a fullness of palate.
these styles can work wonderfully with dishes that have a bit of spice or with something like a roast salted pork.
