the suckling pig is a dessert shiraz.
red dessert wines are rare in australia, which is odd, so many of our desserts have flavours of chocolate and red fruits which won’t go with a white dessert wine.
in the making of this wine we get the shiraz good and ripe, then let the yeast eat about 2/3 of the sugar in the grape before pressing the wine away from the skins and seeds. the result is a deeply coloured red wine which has a flavour that reminds you of cherries. when you have it with a chocolate dessert, it goes all cherry ripe in your mouth.
