Boar Doe is a name we give to our Cabernet Merlot when it’s grown in a cooler than normal Summer/Autumn. The summer of 2021 brought relief after the droughts and heatwaves of the previous summers. The cooler, wetter weather saw the vines return to health and resulted in a longer, more drawn out ripening period.
The Cabernet for this wine was grown on Kywarra Vineyard on the western side of Orange (70%) while the Merlot (30%) was grown just over the hill at the famous Cargo Road Vineyards. Both vineyards are at 860m above sea level and the resulting wine is leafy, berryish, minty and elegant. The Cabernet has the supporting role, providing a muscular skeleton for the Merlots soft fruit to rest on.
This style of wine is perfect with a roast lamb and can be enjoyed young or after a decade or more in the bottle.
