2022 Porcelet Saumon
2022
Description
this little pink piggy was made out of merlot grown in orange.
this is our more food orientated rose as opposed to the rosed pork which is just a good drink.
in the winemaking the grapes are squeezed really hard soon after picking. the colour is the result of this hard squeeze, not from soaking the skins in the juice as we do with the rosed pork. the hard squeeze also extracts tannin and mouthfeel into the wine which is what makes it so food friendly.
try this with pink fish or cold meats.
it's also worth holding on to for a year or so to see how it evolves.
