Description

Trevor is the name of our premium hunter valley shiraz. Its not a wine made every year. We always want to see a depth of colour and a concentration of flavour from the vintage before we assign this label to it. The hunters reputation for shiraz was historically based on elegant, medium bodied shirazs with ageing ability. That pretty much sums up trevor. This wine has a brambly berry nose with hints of vanilla oak. The palate is firm with dusty tannins. A perfect accompaniment to a medium rare steak.

  trevor is a shiraz from our hunter stable. 2022 had a bit of everything in terms of weather so it's always interesting to see what vineyards still hit the high notes when the conditions are less than ideal. this vineyard on deasy's road has a proven track record and was expertly guided to ripeness in the cool summer of 2022. the grapes were picked, destemmed and chilled for 5 days to gently extract colour and flavour into the wine without harshness. the ferment was cool to retain fruit flavours and the wine was gently pressed into oak to finish fermentation and for ageing. The resulting wine is elegant, soft and approachable with notes of brambly fruits and vanilla beans. Try it over the next 5 years with a tender cut of rare beef.
